Hey, I’m Ellie! As the name implies, I kind of really like to eat. However, I follow the paleo diet, so I don’t eat just anything. On my blog, you can find all sorts of gluten/grain free, dairy free, sugar free, soy free, nut free (you get it) recipes! I also love to travel, create DIYs, workout, shop for cute clothes, and just enjoy life in general. So that’s what I blog about: a little bit of everything–with my fair share of sarcasm added into each post.
I have just graduated high school and will be attending CU Boulder in the Fall. I plan to major in Chemistry and minor in Spanish in order to pursue a career in the medical field and continue to live a life focused on health and happiness.
During my time in high school, I have held a variety jobs that have helped me to develop knowledge on health and cooking. At one point I was a baker at a local restaurant. While I still share my love for baking through my in-home bakery, Pampered Paleo Baked Goods & Catering, I do not work at the restaurant any longer. Instead, I am now a toddler gymnastics instructor at a gym in town and a secretary at a Chiropractic office. From these jobs, I have learned countless lessons such as cooking methods, gymnastics stretches, and whole-food-facts; these are the things I share in hopes of getting people excited about health and wellness!
While I do not have any certifications in baking, nutrition, design, etc., I am very much a self-teacher. Countless are the hours that I have spent buried in a book or typing away on the computer screen for answers to my never-ending questions. I have continuously researched the paleo diet and fitness strategies throughout the past three years and feel so blessed to share my knowledge with all of my readers.
