Hey y’all! I say this A LOT, but I have been totally MIA lately. I’m not sure how I’m gonna finish college when junior year was like the hardest year of my life thus far. With work and crossfit and AP homework and ACT studying and track and volleyball and college visits and everything in between, I didn’t have much time for blogging. Anybody else trying to incorporate a greater variety of vegetables in your diet? I’m going to be completely honest with you guys. I hate mushrooms…until now at least. Like I’ve said so many times before: bacon makes everything better. Something gross? Add bacon, it’ll be okay. Eat something really delicious? Add bacon and you’ll be amazed by how it got even better. Crazy, I know. Therefore, I knew that to make myself like mushrooms a bit more, I better add some bacon. And thus this recipe was created. What I didn’t know was how totally OBSESSED I would be with it. I could eat an entire batch of these at once. It’s bad. Hope y’all like them as much as I do. :)
So besides food, what has everyone else been up to?! How’s the open going? OMG, 15.2 KICKED MY BUTT. I’m still sore…3 days later. It was bad. I’m doing the teens scaled workout, and it was still SUPER tough. I made it to the 4th round and got 141 total reps. (kinda glad I was done there though, I was dead!!) 15.1 however wasn’t nearly as hard. Unfortunately, I couldn’t stick my clean and jerk PR at 105 after failing twice, so I ended up with 95. I’m not taking this too seriously though just because I’ve only been in crossfit for a little over a month or two. What I do want to do is fuel my workouts better with food, and it’s been tough for me to figure out the best way to do that since I go to crossfit from 7:30-8:30 and hate eating that late! If anyone has suggestions PLEASE let me know. If I do eat after crossfit it’s usually 4 oz chicken breast and 1/2 cup of sweet potato. Something light, but enough to refuel.
Other than crossfit I’m still working at the local bakery, and HOLY TEMPTATIONS. The carrot cake scent and espresso cake scent get me every freakin’ time. I’m drooling just thinking about it.
Track season has also begun again, and I just love track so much and all of the people I compete with. And the weather gets nice again, so that’s that best part of all!!
I guess that’s about it in a short paraphrase. I wish I could say my life was more entertaining than that, but, umm…haha it’s not. In other news: s/o to this amazing beautiful wonderful awesome weather we’ve been having (in the midwest at least). SUNSHINE I LOVE YOU!
serve: 3-5 prep time: 5 minutes cook time: 5-10 minutes
- 3 slices thick bacon, sliced into cubes
- 1 shallot, minced
- 12 oz. baby portobello mushrooms, sliced
- Preheat a large skillet pan on medium heat.
- Add the bacon slices and cook a little over half way. Do not remove the excess fat.
- Add the minced shallot and stir until translucent.
- Add the mushrooms to the pan and stir until cooked as desired.
Breakfast has always been my greatest priority above all else. I’ve never been one of those people who can go about their day without eating in the morning…quite frankly I don’t know if I could function. When I was a little kid, my brother and I would dip our pizza in applesauce. True story. I no longer eat pizza, but if I did I am certain that I would still smother it in that sweet goodness. I’ve always been a sucker for sweet’n’salty combos, and when I started putting applesauce on my breakfast sausage I was completely in love and it brought back all the memories of my childhood. Buuut, it may just be the store bought kind that’s pretty much up to no good with added sugar and crazy amounts of sodium and chemical additives and Lord knows what else.
