chicken spring rolls + “peanut” sauce {gf, df, vegan option}

Guys guess what. Seriously guess. I bet you’ll never guess. Okay I’ll tell you. The Vietnamese restaurant in my town went out of business. Pretty much the saddest thing to happen since 2012. (not sure what happened in 2012, but I’m sure it was very sad) Continue reading “chicken spring rolls + “peanut” sauce {gf, df, vegan option}”

National Donut Day: Spudnut Ice Cream Sandwiches

I was never really a donut person before I went paleo, but for some reason, those little gluten-filled bastards always sound soooo amazing every time I see them now!  I was scrolling through pinterest the other day and saw the most drool-worthy picture of a grilled donut, and I knew that I HAD to make one asap. Easter Macarons

I hope you all have a wonderful Easter spent with family and friends, celebrating the resurrection of Jesus Christ! Continue reading “Easter Macarons”

“PB”&J Burgers + Crispy Oven-Baked Sweet Potato Fries

"PB"&J Burgers by PamperedPaleoI’ve been wanting to recreate PB&J burgers and make them paleo for quite some time now! My obsession with this sweet & salty burger began when I went on a cross-country road trip this summer. On the way home, we stopped at this amazing bar & grill in Laramie, WY, and my life was forever changed. Anyone remember that picture of pad thai fries I posted? THE GREATEST LIL THINGS I’VE EVER EATEN. SWEAR. Continue reading ““PB”&J Burgers + Crispy Oven-Baked Sweet Potato Fries”

Easy Jam Recipe

Easy Jam Recipe by PamperedPaleoPB&J is still one of my favorite flavors for everything, and it’s so weird because neither peanut butter nor jelly is paleo. Buuut…when you make your own it is! And almond butter is a pretty good substitute for PB (not peanut butter by any means, but whatevs..you feel me)! This recipe was made initially for my “PB”&J Burger recipe, which is super rad so you must try it, but then I started making jam with the fruit from my garden at least once a week and figured it’s kind of an essential and needs to be shared! September has come, and we’ve been having the most lovely Fall weather here in Nebraska. It seriously makes me feel so warm and fuzzy inside because Fall is the GREATEST SEASON EVER!! The coming of Autumn can only mean one thing: ~pumpkin spice lattes~! While I do spend almost every day at Starbucks, I have yet to try their infamous pumpkin drink. Continue reading “Chocolate Caramel Pecan Pie Bars”

Salted Caramel Macaron Ice Cream Sandwiches {Triple Caramel Threat}

Salted Caramel Macaron Ice Cream SandwichHey guys! It’s been so long…like so long since I’ve last posted, and I’m super sorry about this. I could fill you in on every little detail of my life these past few months, but that’d be boring, so I’ll just sum it up into three words: it was busy. Bacon Mushrooms

Bacon Mushrooms by PamperedPaleoAnybody else trying to incorporate a greater variety of vegetables in your diet? I’m going to be completely honest with you guys. I hate mushrooms…until now at least. Like I’ve said so many times before: bacon makes everything better. Something gross? Add bacon, it’ll be okay. Eat something really delicious? Add bacon and you’ll be amazed by how it got even better. Crazy, I know. Therefore, I knew that to make myself like mushrooms a bit more, I better add some bacon. And thus this recipe was created. What I didn’t know was how totally OBSESSED I would be with it. I could eat an entire batch of these at once. It’s bad. Hope y’all like them as much as I do. :)

So besides food, what has everyone else been up to?! How’s the open going? OMG, 15.2 KICKED MY BUTT. I’m still sore…3 days later. It was bad. I’m doing the teens scaled workout, and it was still SUPER tough. I made it to the 4th round and got 141 total reps. (kinda glad I was done there though, I was dead!!) 15.1 however wasn’t nearly as hard. Unfortunately, I couldn’t stick my clean and jerk PR at 105 after failing twice, so I ended up with 95. I’m not taking this too seriously though just because I’ve only been in crossfit for a little over a month or two. What I do want to do is fuel my workouts better with food, and it’s been tough for me to figure out the best way to do that since I go to crossfit from 7:30-8:30 and hate eating that late! If anyone has suggestions PLEASE let me know. If I do eat after crossfit it’s usually 4 oz chicken breast and 1/2 cup of sweet potato. Something light, but enough to refuel.

Other than crossfit I’m still working at the local bakery, and HOLY TEMPTATIONS. The carrot cake scent and espresso cake scent get me every freakin’ time. I’m drooling just thinking about it.

Track season has also begun again, and I just love track so much and all of the people I compete with. And the weather gets nice again, so that’s that best part of all!!

I guess that’s about it in a short paraphrase. I wish I could say my life was more entertaining than that, but, umm…haha it’s not. In other news: s/o to this amazing beautiful wonderful awesome weather we’ve been having (in the midwest at least). SUNSHINE I LOVE YOU!
